- Purslane (Portulaca oleracea)
Purslane is a local plant and tastes delicious in salads, hence it has already been popular since the middle ages. The succulent, crunchy leaves have a fresh and tangy flavour and light acidity. - Evening-Primrose/ Evening Star / Sun Drop (Oenothera biennis)
The tubers of the evening-primrose contain starch, taste very aromatic and are very healthy. - Earth Almond /Chufa Sedge/ Tiger Nut Sedge/ Nut Grass (Cyperus esculentus var. sativus)
Earth almond is a grass plant with almond shaped tubers, harvested in autumn. The almond shaped bulbs are rich in good oils, have a lovely nutty flavour and taste delicious either eaten raw or roasted. - Scurvy grass (Cochlearia officinalis)
Scurvy grass is rich in vitamin c and its spoon-shaped leaves have a cress like sharpness and are a delicious addition to any salad. - Wild Garlic/ Ramsons/ Bear's Garlic (Allium ursinum)

This wild form of our common carrot develops rather skinny roots, which tend to lignify but have a wonderful intense aroma and delicate texture when harvested early.
